wow that thing is HUGE! i adopted a truffle tree in gascony, france in the hopes of someday reaping the rewards but i've been thinking of planting a mycorrhized oak of my own here at home. real truffles are a little out of my budget but i liked reading through your recipe section nonetheless! when i was working at Aria in Sydney (Australia) we used to collect all the leftover shavings, combine them with creme fraiche, spread it in layers of camembert and let it sit to infuse for a week before serving it with a crisp apple salad and local honey. it was absolutely beautiful as i'm sure your recipes are too :)
